Pineapple Vegan Crustless Cheesecake Bites Recipe

This light and creamy recipe is perfect for a bite-sized dessert or snack! Add some extra fruit and Herbaland's Pineapple Ginger Gummies for even more flavor and fun 😍

Ingredients:

  • 1.5 cups of soaked cashews, soak over night in water or cover with boiling water for 1/2 hour
  • 1 large lemon, juiced
  • 1/3 cup coconut oil, melted
  • 2/3 cup full fat coconut milk
  • ¼ cup maple syrup 
  • ½ cup chopped fresh pineapple
  • Pineapple Ginger Herbaland Gummies
  • Fresh berries
  • Extra pineapple chunks to put on top 

Method:

  • Throw the first six ingredients into a blender (everything but the berries and gummies) 
  • Blend until creamy smooth
  • Line a baking dish with parchment paper 
  • Pour mixture into dish and spread evenly
  • Freeze until solid, about 3 hours
  • Remove and cut into bite size pieces
  • Top with the gummies, fresh berries and pineapple chunks
  • Enjoy!
